My week of Buzzfeed Breakfast: An honest account

This week, as part of my challenge to get healthier over summer, I have attempted to try some exotic (in comparison to my usual weetabix, that is) breakfast recipes, inspired by Buzzfeed and instagram! For the most part they have been healthy and for the most part they have been reasonably successful (again, in comparison to my usual cooking attempts), so I thought I’d share them with you just incase you too had far too much time on your hands.

Day 1: Overnight Oats

Now, I am not going to lie to you, I made these less because I thought soggy oats sounded appealing and rather because they make for a top instagram picture. Although I was slightly disappointed that my instagram post didn’t quite look as I had hoped, the soggy oats were actually pretty tasty.

What you will need: 

A jar (or a bowl, if you’re making it for the sole purpose of eating)

Oats (I just used porridge oats, although ones I have seen online go for more fancy variations)

Coconut Soya milk (or just normal milk, depending on your preference)

Fruit of your choice (I went for strawberries, cherries and raspberries)

Greek yogurt

Honey (optional)

What to do: 

This is great if you want to have your breakfast prepared in advance!

Basically you just layer up the ingredients. I started with oats and then added the soya milk so they go nice and soggy (I promise this is better than in sounds). Then I added strawberries, more oats and milk, yogurt and a drizzle of honey. I carried on layering this up until I had enough for my breakfast and out it in the fridge overnight.

Rating: 7/10

Instagram worthiness: 6/10

Day 2: Honey and cinnamon grilled banana with greek yogurt 

Again, this tastes better than it actually sounds. I admit I added more sugar than I needed to, so it wasn’t actually that healthy but its fruit so it still made it on the list.

What you will need: 

1 Banana

Ground cinnamon



Greek Yogurt (optional but good)

What to do: 

Turn on the grill (I think I put it on about 180 and then turned it down after about 5 mins). Peeled the banana and slit it along the top. Add honey and as much sugar and cinnamon as you see fit. Leave to grill for about 10 minutes, then serve warm with the greek yogurt.

Rating: 5/10

Instagram worthiness: 2/10 (I mean, its a banana on a plate really) 

Day 3: Avocado and egg on toast

Of course avocado was going to feature somewhere. I’ve also had this with bacon and tomatoes, so take your pick!

What you will need: 

Bread (whatever sort you like)


Salt and pepper


What to do: 

Peel the avocado and mush it up with the back of a fork. Add the salt and pepper to taste. You can have the egg however you like but I decided to poach mine. Toast your bread, but the avocado on top and the egg on top of that. Easy peasy.

Rating: 8/10 (Would have scored higher for taste but it was a lot of messing around that early in the morning) 

Instagram worthiness: 9/10 (anything with an avocado is going to rake in the likes, let’s be honest) 

Day 4: Cheesy ham and egg breakfast bread roll 

Okay, so by day 4 I gave up on the being healthy. Turns out healthy breakfast recipes on Buzzfeed are hard to find unless you fancy seeds in a bowl.

What you will need: 

A bread roll



Grated Mozzarella (any cheese would do the trick though)

What to do: 

Preheat the oven to about 180 degrees. Cut off the top of the bread bun and scoop out/press down to middle. Line the insides with the ham and then crack the egg into it (I added some salt and pepper at this point). Sprinkle the grated cheese over the top, put the lid back on and wrap it in tin foil. Put it in the oven for about 10 minutes, longer if you like your yolks harder.

Rating: 7/10 (good, but a lot of hassle)

Instagram worthiness: 3/10 (I burnt the bread slightly and really over did it on the cheese, but it has potential) 

Day 5: Nutella stuffed french toast 

Why did I even lie at the beginning? These are not healthy.

What you will need: 

Thick bread







What to do: 

Mix the eggs, milk, sugar and cinnamon in a bowl. Cut the bread into slices and spread with nutella. Soak the bread in the egg mixture and then fry them in a non stick pan with butter until it is golden. I then sprinkles some more sugar and cinnamon on top.

Rating: 5/10 (good, but it was even too sickly for me first thing in the morning. Plus, I made a mess) 

Instagram worthiness: 5/10 (it was messy but it was also nutella so half marks) 

So, there you have it. That was my week of attempting Buzzfeed breakfasts. It wasn’t a disaster but, if I’m honest, I think I’ll stick to my weetabix in the future. Let me know fi you try any of the recipes, or if you have any recipes for me to try!
